Choose someone you can trust and who understands you and your food requirements for the wedding day. Go through every detail with your caterer well ahead of time. Then, on the day you can relax, free to enjoy the celebrations, confident that all those important little details are being taken care of by someone else. 

• Work out the time schedules with the manager.
• When do they need to know about final numbers?
• Small snacks can keep guests busy if wedding is not running on time which is quite often the case (so we say Indian Time).
• How would you like the service of the meal, sit down or buffet?
• Who will serve the food - caters or you as the client?
• Do they offer a series of set dishes or will they plan a menu around your suggestions?
• Do they prepare food on their own premises or at a venue?
• Are there extra charges for delivery?
• How experienced are they? Check their references to make sure.
• It will help if your caterer can provide a co-ordination service between you and your chosen venue.
• What is the ratio of waitresses/ waiters to number of guests?
• Is there a minimum or maximum number of guests that they will cater for?
• If they charge by head - is there reduced price for children?
• Are they able to supply additional cutlery, plates, linen or even arrange the tables and flowers.
• Check on corkage charges if you are supplying your own drinks.
• If you are paying for wine or champagne by bottle ask for the corks to be kept, so that you can double check the quantities consumed.
• Do they provide an ethnic flair to your cuisine - Thai, Chinese or even Italian?
• It is advisable to get everything in writing as to what the caterer is providing and what you as the client are expected to provide.
• Ask to have information sent to you by e-mail if you have one.
